About Sean...

Sean Connolly is an English-born Australian chef, who has six restaurants in three corners of the globe: UAE, New Zealand and Australia. His latest venture is Dubai Opera, a contemporary brasserie with a produce-driven menu serving seafood and steak, nestled next to Burj Khalifa. His other venues include The Morrison in the heart of Sydney’s CBD and The Balcony Bar and Restaurant at the millionaire’s playground of Byron Bay, on the Far North Coast of NSW. In Adelaide, there is Sean’s Kitchen, while across the ditch, Auckland plays host to the two-hatted The Grill by Sean Connolly and the single-toqued Gusto at The Grand. Sean is a much-sought after consultant chef, working closely with global hotels, international airlines and restaurant groups to introduce his much-awarded style of cuisine to their offerings. He also has a range of retail and commercial products, from hot sauce to hand-selected extra virgin olive oil. When not on a plane, Sean is either on the phone, emailing or in the kitchen sharing his expertise among a vast network of chefs and hospitality colleagues who help make a success of the Sean Connolly brand.

Sean Connolly at Dubai Opera

This venture is a contemporary brasserie with a produce-driven menu serving the best available seafood and steak. Nestled next to Burj Khalifa, Sean Connolly at Dubai Opera is the British-born Australian chef’s first restaurant in the Middle East. Sean’s humble cooking brings down-to-earth dining to the global destination that is Dubai be it Scottish blue lobster or Rangers Valley Black Angus beef from Australia.

The Grill by Sean Connolly - Auckland

The Grill offers a relaxed and uncomplicated atmosphere that complements the fresh, honest seasonally fresh produce that Auckland is famous for. From pasture-fed lamb to succulent sustainable seafood provided by local suppliers, there's a distinctly Kiwi accent to the menu. Whether you are looking for a smart, casual lunch or a sophisticated dinner, there’s is a delicious dish to suit every palate.

Gusto at the Grand - Auckland

Gusto is where Sean’s Italian style is best displayed. With the influence of his late, great friend Antonio Carluccio ever-present, the menu at Gusto at The Grand is designed to share with family and friends in true Italian style. Small, medium and larger dishes range from housemade ricotta with honey and roasted pine nuts to a signature mushroom risotto and the incredible Acqua Pazza – a whole fish cooked in Coromandel sea water.

Sean's Kitchen - Adelaide

A New York-style brasserie offering French-influenced food using the very best of South Australian produce is what is on offer at Sean’s Kitchen, in Australia’s cultural hub of Adelaide. The menu changes regularly as it continues to showcase what fine food this state has to offer, from Coffin Bay oysters and Port Lincoln blue fin tuna to Riverine beef and Saskia Beer’s poultry.

The Morrison Bar & Oyster Room - Sydney

The Morrison is Sean’s ultimate statement in sophistication and style. Set in a historic pub in the heart of Sydney’s financial district, this partnership with Sydney Collective's Fraser Short tips its hat to the classic New York brasserie. What was once the old Brooklyn Hotel is now the hugely popular and beautifully refurbished Morrison Bar and Oyster Room, the bustling Parlour and privacy of The Conservatory. Maintaining Sean’s single focus to use the best possible produce offered in the best possible way, The Morrison’s offering across each of the individual spaces ranges from Australia’s finest oysters shucked-to-order, fresh catch of the day cooked on the grill or casual burgers and tacos at the street-side bar.

Balcony Bar - Byron Bay

Byron Bay an Australian holiday destination like no other, and Balcony Bay is the casual country cousin of The Morrison where patrons can unwind and escape from the city. Sitting atop Byron’s main street and steps away from its dreamy beaches, Sean invites you to take a seat at the Balcony Bay and watch the world cruise by while enjoying lunch, dinner or weekend brunch. All dishes are simple, honest, seasonal, and ingredient-focused be it freshly-shucked oysters, crab linguine or slow-roasted local Berkshire pork. This is also a partnership with Sydney Collective, where you can spend late afternoons taking in all that Byron has to offer, while sipping a cocktail and savouring the best of Sean’s carefully selected produce.
