Sean Connolly is an English-born Australian chef, who has six restaurants in three corners of the globe: UAE, New Zealand and Australia. His latest venture is Dubai Opera, a contemporary brasserie with a produce-driven menu serving seafood and steak, nestled next to Burj Khalifa. His other venues include The Morrison in the heart of Sydney’s CBD and The Balcony Bar and Restaurant at the millionaire’s playground of Byron Bay, on the Far North Coast of NSW. In Adelaide, there is Sean’s Kitchen, while across the ditch, Auckland plays host to the two-hatted The Grill by Sean Connolly and the single-toqued Gusto at The Grand. Sean is a much-sought after consultant chef, working closely with global hotels and restaurant groups to introduce his much-awarded style of cuisine to their offerings. He also has a range of retail and commercial products, from hot sauce to hand-selected extra virgin olive oil. When not on a plane, Sean is either on the phone, emailing or in the kitchen sharing his expertise among a vast network of chefs and hospitality colleagues who help make a success of the Sean Connolly brand.

Located at the top of one of the UAE’s most iconic buildings, Sean Connolly at Dubai Opera is the British-born Australian chef’s first restaurant in the Middle East.
Sean Connolly at Dubai Opera is a contemporary brasserie, with an uncomplicated and produce driven menu serving seafood and steak, which can be enjoyed in the main restaurant, the cocktail Pearl Bar or at the rooftop terrace with an impressive view of the Burj Khalifa.
The restaurant design was inspired by the highly irregular shape and scale of the Dubai Opera building. Each design element within the venue explores ideas of the sea, from the oyster with its combination of smooth sensual surface and textured outer surface to the oceanic tones and colours of corals and pearlescent hues.
The 20th Century classic design and architecture combined with the oceanic Australian and New Zealand influences of Sean Connolly’s humble cooking brings down-to-earth dining to Downtown Dubai.

The Grill by Sean Connolly is a celebration of great food and good company. At The Grill, Sean takes pride in offering a relaxed, uncomplicated atmosphere that complements the fresh, honest fare, that is simply prepared to let the natural flavours shine through.
From tender pasture-fed meat to succulent sustainable seafood, you'll notice there's a distinctly Kiwi accent to the menu. In fact most of the ingredients used are sourced locally from specially selected New Zealand suppliers, along with much of the cookware and a rather special wine list.
In short, whether you're looking for a casual lunch with friends or a sophisticated dinner with clients, there's something to suit every palate.

Gusto at the Grand - Auckland
Gusto’s lunch and dinner menu is designed to share with family and friends in true Italian style. There is a selection of small, medium and larger dishes ranging from the housemade ricotta with honey and roasted pine nuts to the signature mushroom risotto and the incredible Acqua Pazza – a whole fish cooked in Coromandel sea water. There is also a delicious selection of cheeses and desserts, including the popular rum baba.

Sean has opened his latest New York Brasserie inspired restaurant presenting mouth-watering dishes utilising the very best of South Australia's produce in a contemporary setting. Menus change regularly to showcase the best seasonal produce. The restaurant also includes an al fresco dining area along Station Road.

What was the old Brooklyn Hotel is now the beautifully refurbished Morrison Bar and Oyster Room. It's an opportunity to dine with friends at communal tables in The Oyster Room, where Australia’s finest oysters are shucked-to-order. The Conservatory is an open-air terrace which offers a private but stylish setting under the stars, cocktail in hand and a la carte menu to feast on. The bustling Parlour is a destination that allows you to unwind the working week surrounded by friends for a long and late as you like.
This is a restaurant menu for grown ups. Sean's international experience shines at this venue and reflects his signature style of seasonal produce, cooked on the bone and in the shell wherever possible.

Balcony Bar - Byron Bay
Just metres from the legendary Main Beach at Byron Bay, Balcony Bay sits atop the buzzing streets and dreamy beaches. Expect to see bivalve fans slurping expertly shucked oysters and tucking into interesting plates.
In another partnership with Sydney Collective, Sean's menu features simple, honest, seasonal, ingredient-focused food consisting of an array of fresh dishes created from locally-sourced and sustainable produce. There really isn’t a better way to spend a late afternoon in Byron than sipping a cocktail and sucking down fresh oysters at Balcony.
